The
spacious tasting room offers hospitality,
hand crafted wines to taste and a gourmet
foods shop. Also available are many unique
gift items including crystal, wine accessories
and logo apparel. Enjoy the expansive
views of the vineyards and nearby mountain
range with a picnic basket or with a sampling
of our large assortment of gourmet meats
and cheeses.
Be sure and take an extra few minutes
to explore our classic railcars on display,
including 2 vintage Pullman sleepers and
a dining car. These cars are a tribute
to a bygone era of luxury rail travel.

SAGANAKI
Pair with our
Kiara Reserve Pinot Noir
Appetizer Serves 8
8 OZ. Kasseri Cheese, shredded
¾ teaspoon red wine vinegar
¾ teaspoon lemon/ orange juice
¼ teaspoon dried oregano
1-1/2 tablespoon brandy
1 baguette-sliced

Melt Kasseri cheese over medium heat in a skillet,
Stirring occasionally. Whisk the vinegar, lemon
juice and oregano into cheese and whisk to blend.
Rim with brandy and ignite. Serve immediately with
sliced bread and a glass of red wine.

Chardonay
Sylvester Chardonnay is light and crisp
with soft, ripe fruit notes, a smooth
finish and full body. It is a great wine
to have with soft cheeses. The Chardonnay
has been aged 10 months in oak barrels.
It is sensational with Smoked Salmon and
Caviar Appetizers, Caesar Salads and Fresh
Chilled Gazpacho, Barbecued Shrimp and
Rotisserie Chicken, Fresh Fruit Tarts
and New York Cheese Cake.

Syrah
Sylvester Syrah is a particularly well-balanced
wine, rich in fresh cherry and exotic
chocolate flavors, with toasted oak overtones.
It is impressive in its finesse. The Syrah
is aged in oak for 10 months. Sylvester
Syrah goes well with rich flavorful foods
such as Wild Mushroom Ragout Turnovers
and Carpaccio of Ahi starters, Arugula
with Shaved Parmesan Cheese and Bursted
Barley & Mushroom Soup, Seared Filet Mignon
and Grilled Atlantic Sea Bass, Fresh Blackberry
Cobbler and Chocolate Mousse.

Merlot
Sylvester Merlot is lightly laced with
the flavors of summer plums and cherries
and balanced with a background of warm
oak notes. The Merlot is aged in oak for
10 months. It is ready to drink with Foie
Gras and French Onion Soup, Beet Vinaigrette,
Roasted Loin of Venison and Lacquered
Canton Duck, Assorted Cheese and Fresh
& Grilled Figs.

Sangiovese
Sylvester Sangiovese is true love, Italian
style-simply flavored and balanced with
oak. The Sangiovese is aged in oak for
12 months. Make an Italian feast with
Prosciutto & Melon and Traditional Antipasti,
Caprese Salad and Pasta Fagioli, Eggplant
Stuffed Ravioli with Tomato Mushroom Sauce
and Slow-Roasted Osso Bucco, Pistachio
and Chocolate Stuffed Cannoli and Tiramisu.

Zinfandel
Sylvester Zinfandel rich with flavors
of fresh spring berries and a hint of
light cedar, has been aged in oak barrels
for 14 months. The oak and fruit are well
balanced, making it a great wine to drink
with traditional American favorites. Serve
this Zinfandel with Grilled Flatbread
Wedges and Bacon-Wrapped Stuffed Mushrooms,
Mixed Harvest Grilled Vegetable Salad
and Baked Potato Soup, Barbecued Santa
Rosa Tri-Tip and Hickory Smoked Free-Range
Chicken, Sour Cherry Pie and Vanilla Bean
Ice Cream with Caramel-Fudge Ribbons.

Cabernet Sauvignon
Sylvester Cabernet Sauvignon is complex
yet well-balanced with layers of flavors
of berries and cherries, it has been aged
in oak barrels for 14 months. This wine
will continue to age well in the bottle
and will only get better with time. The
Cabernet Sauvignon is well-suited to complement
Caramelized Red Onion & Blue Cheese Tarts
and Country Black Pepper Terrine, Roasted
Red Pepper Soup and Seared Rare Steak
Salad with Parmesan Cheese Crisps, Grilled
Wild Mushroom Stuffed Veal Chop and Duck
